Chocolate Muffin
flour 210g, Cocoa Powder 50g, Baking Powder 1 1/2 tsp., Baking Soda 1/2 tsp., Salt 1/2 tsp., Caster Sugar 200g, Butter(melted) 90g, cooking oil 30g 2 Eggs, Milk 170ml, Baking Chocolate(cut to small pieces) or Chocolate chips 1/2 cup
1) Sift flour,cocoa powder,baking powder,baking soda, mix togerher, add salt & sugar,mix well
2) Egg slightly beat,add in butter,oil, and milk,mix well.
3) Add (2) into (1)(mixed flour),mix it until just combind.Add chocoalate pieces and stir well.
4) Pre-heat oven 170*C. pour batter into cup cake mould. Bake 18-20 minutes.

Coffee Scone 㗎啡士乾
材料: Self-Raising flour 自發麵粉 280g (約 2 cup), Butter 牛油 45g , Baking Powder 發粉 1/2 tbsp., Caster Sugar 糖 35g, Salt 鹽 1/4 tsp., Milk 牛奶 80g, Egg 疍 1隻, Coffee 㗎啡液 20g ( ( 2 tsp. Instant coffee 即溶㗎啡粉 + 20g hot Water 熱水 ) 可做 6個
1) 牛油切成小塊,拌入粉中,用手指和粉揑合成沙粒狀.然後加入Baking Powder, 糖,鹽拌勻
2) 牛奶和雞蛋打勻,加入㗎啡液攪勻.全倒入麵粉中,粗略的把液體和粉混合,盡量保留些乾粉在中間,全部倒在桌面上,用摺疊的方式,多做3次,把粉團整理成厚身長方形狀(約2cm)
3) 可用6.5cm 的圓模印出每一個餅形,分開些排列在盤中,面和側面可掃上疍液或牛奶
4) 預熱焗爐200*C,Scone 放入,約焗 16 分鐘。餅升起後,側中間有裂紋最好,觀察餅的顏色再略調低溫度
