天婦羅粉漿及點汁----Tempura Batter and sauce

Batter: 200 ml ice cold water , 1 egg , 100g flour, 10g corn flour, ( Half portion of this batter can make 18 pieces of Prawn)
Mix two types of flour together. Beat an egg in a bowl,add in ice water, Add sifted flour and mix lightly,(no need to make it very smooth) Beware not to over mix the batter.

Sauce: 1/2 cup Dashi Soup Stock, 1/8 cup Mirin, 1/8 cup Soy Sauce, 1/4 tbsp. sugar
Heat Mirin in a sauce pan, add soy sauce, Dashi Soup and sugar, bring to boil.

天婦羅粉漿: 冰水(很冷的) 200 ml, 蛋 1隻 , 麵粉 100g, 粟粉 10g, (半份粉漿可做約 18 件蝦)
先把兩種粉拌勻。把蛋打在大碗中,加入冰水拌勻,篩入粉,輕輕搞拌。不要搞過份了,否則不脆。
天婦羅汁: 1/2 杯 Dashi Soup, 1/8 杯 Mirin, 1/8 杯 Soy sauce, 1/4 湯匙糖
把 Mirin 放窩中加熱,加入醬油( soy sauce), Dashi soup 和糖,煮滾備用。
